Almond Oatmeal Cake Batter Shake + Homemade Almond Milk




This is my absolute FAVORITE new shake concoction so I had to share!  Not only does it taste like cake batter (I'm not kidding it is SO delicious), but its also vegan friendly and filled with high quality nutrient and (good) calorie dense superfoods!

It looks super green but I swear you can't even taste the green part!  Its like you're getting in all your greens with a delicious vanilla almond butter cake!  The convenience of making a shake to get in extra nutrients is something I can't pass up plus the taste makes it worth it 100%.  I drink this almost daily now after my morning workout.

I also got brave and made my own almond milk for the first time.  Many of the store bought brands have additives, thickeners and sweeteners in them.  Plus they are often only about 1% actual almonds and mostly water... so making your own is a great option to get more nutrients and maybe cheaper as well! I was surprised at how easy it was to make!

Ingredients:

1 scoop Vegan Vanilla Shakeology
2 scoops Vital Proteins Collagen Peptides
1 tsp natural peanut butter or almond butter
1 tablespoon flax seeds
1 cup frozen spinach
8 oz unsweetened almond or coconut milk (homemade almond milk recipe below)
2 tablespoons gluten free oats
1 cup ice
(Ice cold water - optional)


Blend all ingredients in high powdered blender. Add cold water to achieve desired consistency. I personally like my shakes medium thickness so I don't add much water.






How to make almond milk:

Ingredients:

I used a 300g (.6 lbs) bag of unsalted almonds
3 cups of water
Stevia to taste
sea salt to taste

1.  Place almonds in a medium bowl and soak in water overnight
2.  The next day drain any extra water that isn't absorbed.
3. Place almonds in blender with 3 cups of water and blend until smooth.
4. Use nut milk bag to strain the almond milk batter into a large bowl.  Squeeze hard until no liquid remains in the bag.
5. Put the milk from the bowl into a container to store.  Add stevia and sea salt to taste.  Then refrigerate.
