Pineapple Chicken Skewers
This recipe has become one of my favorite Summer staples. It fits in perfectly with my 80 Day Obsession meal plan combining protein, veggies and fruit for a delicious combo!
If you're following the 21 Day Fix or the color coded containers system this is 1 red, 1 purple and 1 green.
Here's what you need:
1 lb chicken breast, cut in chunks
1 pineapple, cut in chunks
2 red or orange bell peppers, cut in chunks
1 large onion, cut in chunks
low sodium soy sauce
2 tsp ginger
2 tsp sesame oil
wooden skewers
Soak wooden skewers in water for about 30 minutes.
Cut chicken and place in plastic bag, add soy sauce, oil and ginger. Seal the bag and shake gently to mix. Refrigerate for about 30 minutes.
Preheat your grill to medium heat. Place a piece of chicken, pineapple, bell pepper and onion on to the skewer and repeat until it has 2-3 of each ingredient. Grill skewers on covered grill for 4-5 minutes on each side or until the chicken is no longer pink in the middle. You can serve this alongside quinoa, brown rice or have them for a snack during the day. I like to make these ahead of time and keep them in containers for a quick yummy afternoon snack!
