No Bake {Lactation Friendly} Coconut Chocolate Cookies



These lactation friendly {NO BAKE} Chocolate Coconut Cookies are my new fav!  I always love a good substitution for traditional sweet treats and its just a plus that they’re filled with lots of healthy fats and quality calories to help boost supply or increase your nutrient intake!  Plus, you probably have most of the ingredients at your house to can whip them up in just a few minutes!



Here's what you need:


2 tablespoons coconut oil
2 tablespoons flaxseeds
4 tablespoons gluten free oats
2 tablespoons all natural peanut butter (or your choice of nut butter)
2 tablespoons unsweetened all natural shredded coconut
4 drops of vanilla stevia or 1 packet granulated stevia
3 tablespoons chocolate protein powder or cocoa powder (I used 2 TBSP vegan chocolate shakeology + 1 TBSP vanilla bone broth powder)


In a microwave safe dish, melt coconut oil if not already liquid.

Stir in peanut butter until smooth. If you chose to make these with cocoa powder or protein powder, add it now.
Add stevia, coconut, flax, oats. Mix well.
Scoop 2″ spoonfuls onto a sheet pan.
Freeze for 10 minutes.
Store in a sealed bag, refrigerated.  If you do not store refrigerated they will be sticky or possibly melt down.  If yours seem more liquid add more powder, oats and coconut to create the desired consistency.
