Easy Salmon and Zuchinni

I'm all about simple clean meals.  I don't like spending a lot of time in the kitchen with our busy schedule so this recipe is perfect for a simple Summer dish!

What you'll need:

1 salmon filet (5-6oz)
1 Tbsp olive oil
1/2 tsp ginger powder
Sea salt
Garlic powder
1-2 zucchini 


Heat pan over medium heat.  Coat filet lightly with olive oil and place in pan, skin side down. Season immediately with ginger powder, sea salt, pepper, and garlic powder. Cook about 3-4 minutes then flip with spatula and cook additions 3-4 minutes or until flesh feels firm to the touch and skin is crisp.  Overcoming will make it dry! 

You can slice up the zucchini in about 1/4" rounds and sautee in the same pan over the salmon with olive oil and season it will garlic powder, sea salt and pepper. Easy!! 

Serve this with a 1/2 cup cooked sweet potato. For fastest results poke the potato with a fork 5-10 times and cook in microwave for 8-10 minutes.  Add a tap of butter and cinnamon if you'd like!
