Baked Balsamic Chicken

This is a recipe that I absolutely love! Its so simple and easy to make. Normally I will make a large batch of it and store in containers for my meal prep for the week.  It's delicious for easy lunches or dinners.  Everyone in our family enjoys it!

It's so fast and easy and comes together in about 20-30 minutes MAX!

Here's what you need:

2 teaspoons olive oil
1 medium onion
4 6 oz chicken breasts, sliced thin or cut into strips
salt and pepper
Italian seasoning (or you can use oregano/basil and garlic)
1/3 cup balsamic vinegar
1/3 cup chicken broth


1. Heat oil in pan over medium heat.
2. Chop onion into slices.
3. Saute onions until lightly browned (3-4 minutes)
4. Pre-heat over to 350 degrees.
5. Slice chicken into strips and season with salt + pepper and Italian seasoning
6. Add chicken to the pan, cook for 2-3 minutes on each side.
7. Add balsamic vinegar and chicken broth.
8. Reduce heat and transfer everything in pan to baking dish.
9. Bake for 10 minutes then take extra sauce and spoon over chicken, bake for 10 more minutes. 
10. Serve chicken with extra juices drizzled on top.

We love to serve this recipe on top of brown rice and green beans!
